What started as one brother's passion for traditional rum making became a shared dream. Together with our family, we built Alligator Bay Distillers on a simple belief: “great spirits are never rushed”. They come from honest ingredients, time-honored methods, and a genuine love for the craft.

As our rums earned recognition across Florida, we realized what mattered most wasn't being on store shelves—it was sharing what we create with the people enjoying it.

That journey brought us home to Downtown Bonita Springs, where HIDE·A·WAI was born. Here, we press fresh sugarcane, distill with purpose, and craft every cocktail with the same Cane to Bottle philosophy that started it all.

Because the best spirits aren't just made by hand — they're made with heart, shared with family, and meant to be enjoyed together.
